Diana's Pancakes

There is nothing better than Sunday morning breakfast with the family.

Those are some of my fondest memories growing up. Mom's in the kitchen with the griddle on making something delicious. The rest of the family is around the table anticipating the arrival of moms home cooking so bellies can be satisfied. There's just nothing like it!

We have a DELICIOUS pancake recipe (gluten-free & grain-free) for you that is sure to get your family around the table.

Diana's Pancakes

Grain-Free Gluten-Free with Apple Cinnamon Sauce

Makes 18 dollar-sized

1 Cup blanched almond flour

½ Cup Sprouted Flax meal

2 TBS coconut flour

½ tsp baking soda

¼ tsp salt

5 eggs

½ cup shortening or butter

1 TBS honey

1 TBS apple cider vinegar

2 TBS coconut oil or Sunflower oil

In food processor, pulse together all dried ingredients. Add the remaining ingredients (except coconut oil) and pulse until thoroughly combined.

Heat coconut oil 2 teaspoons for each batch in skillet at med-heat. Scoop heaping TBS of batter per pancake. Cook until small bubbles appear and burst then flip and cook till lightly brown.

Apple Cinnamon Sauce

Peel 2 large apples, core and chop into to small chunks. Place in skillet with 1 TBS of butter and saute’ until soft, sprinkle with cinnamon and add ½ cup maple syrup. 

Top with Apple Cinnamon Sauce

Vanilla yogurt
